Peter Bachmann is often asked "How did smoked salmon come to Gailtal?"
He is happy to chat with passionate gourmets and fish lovers about certain "coincidences" (in which he doesn´t believe) starting with a Scotsman who smoked salmon on Lanzarote, to a boozy night dining on salmon with friend and "noodle professor" Lenzi Gregori in 1992…

Organic, Rock Salt & Co

All herbs, spices and ingredients are of fully organic origin and are subject to the strict monitoring of the "Austrian Organic Guarantee." From farming to production every step of the process follows the "slow food" concept! - Primitive salt - as precious as gold
We only season with natural rock salt from Austria. This is million year old salt that comes from dried up primordial oceans. It is void of the effects of civilization and yet still contains all the trace elements and essential minerals. - Grander water
We make use of "living" water with all natural information in the pickling process. Regenerated, by what has now become known as a scientifically recognized technology, by the water researcher Johann Grander. Water-the source of life!
